Preparation

1

Cook Farro Verde

In a medium saucepan, bring 3 cups of water to a boil. Add the farro and a pinch of salt. Reduce heat to low and simmer for 20-25 minutes or until tender. Drain and let cool.

2

Prepare Salad Ingredients

In a large bowl, combine the Esoterra salad greens, crunchy seed mix, sliced almonds, diced cucumber, and halved baby heirloom tomatoes.

3

Make Vinaigrette

In a small bowl, whisk together ¼ cup olive oil, 2 tablespoons Dijon mustard, 1 tablespoon chopped fresh tarragon, 1 tablespoon red wine vinegar, and salt and pepper to taste.

4

Assemble Salad

Add the cooled farro to the bowl with the salad ingredients. Drizzle with the house-made Dijon-tarragon vinaigrette and toss gently to combine.

5

Serve

Serve the salad immediately, garnished with extra almonds if desired.
