Dough and Filling
Method
Making the Ravioli
- 1
Prepare the Dough
In a mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into it. Mix together until a dough forms, then knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- 2
Prepare the Filling
In a food processor, blend corn kernels, ricotta cheese, and a pinch of salt until smooth. Set aside.
- 3
Roll out the Dough
After resting, roll out the dough on a floured surface until thin. Use a pasta machine if available for best results.
- 4
Shape the Ravioli
Cut the rolled dough into squares. Place a small spoonful of the filling in the center of half of the squares. Moisten the edges with water and cover with the remaining squares. Press firmly to seal.
