Method
Preparation of Potatoes

Wash and Cut Potatoes
Thoroughly wash the Russet potatoes under cold water. Peel if desired, then cut them into small cubes or wedges, approximately 1 inch in size.

Preheat Oven
Preheat the oven to 425°F (220°C) to ensure it is hot enough to roast the potatoes perfectly.

Season Potatoes
In a large mixing bowl, combine the cut potatoes, olive oil, minced garlic, salt, black pepper, paprika, and dried oregano. Toss well until all the potatoes are evenly coated with the seasoning.
Roasting Potatoes

Prepare Baking Tray
Line a half or full tray with parchment paper to prevent sticking. Spread the seasoned potatoes evenly on the tray.

Roast in Oven
Place the tray in the preheated oven and roast for about 30-35 minutes, or until the potatoes are golden brown and tender, stirring halfway through to ensure even cooking.
Optional Chicken/Sausage Addition

Prepare Chicken/Sausage
If using chicken, season the boneless thighs with salt and pepper. For sausage, simply slice them into rounds. You can add either the chicken or sausage to the same tray as the potatoes.

Combine and Roast
If adding chicken or sausage, place them on the tray with the potatoes in the last 15 minutes of roasting. Ensure they are cooked through (chicken reaches an internal temperature of 165°F/74°C).
Finishing Touches

Add Fresh Parsley
Once the potatoes (and chicken or sausage, if used) are done roasting, remove them from the oven and sprinkle chopped fresh parsley over the top for added flavor and color.
