1. Chop the Vegetables

Prepare the vegetables by chopping the cauliflower, slicing the carrots, dicing the green bell pepper, and dicing the celery. Also, mince the garlic cloves.

In a large mixing bowl, combine the prepared cauliflower, carrots, green bell pepper, celery, and minced garlic. Mix well and set aside.

Once the brine is boiling, pour it over the mixed vegetables in the bowl. Ensure the vegetables are fully submerged. Let it cool to room temperature.

5. Refrigerate

Transfer the vegetables and brine into a clean glass jar or container. Seal tightly and refrigerate for at least 24 hours to allow the flavors to meld.
