Chop the Vegetables
Prepare the vegetables by chopping the cauliflower, slicing the carrots, dicing the green bell pepper, and dicing the celery. Also, mince the garlic cloves.

Combine Vegetables
In a large mixing bowl, combine the prepared cauliflower, carrots, green bell pepper, celery, and minced garlic. Mix well and set aside.

Prepare the Brine
In a medium saucepan, combine the white vinegar, water, olive oil, kosher salt, red pepper flakes, black peppercorns, and dried oregano. Bring the mixture to a boil over medium heat, stirring until the salt is dissolved.

Pickle the Vegetables
Once the brine is boiling, pour it over the mixed vegetables in the bowl. Ensure the vegetables are fully submerged. Let it cool to room temperature.
