Tamale Dough

Method

Tamale Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine masa harina, baking powder, and salt. Whisk together until well mixed.

  2. 2

    Add Shortening

Add the vegetable shortening to the dry ingredients and mix with your hands or a pastry cutter until crumbly.

  3. 3

    Incorporate Broth

Gradually add chicken broth to the mixture, stirring until a smooth dough forms. The dough should be moist but not sticky.

Sausage Filling Preparation

  1. 4

    Cook Sausage

In a skillet over medium heat, add the Italian sausage and cook until browned, breaking it apart with a spatula as it cooks.

  2. 5

    Add Vegetables

Add the chopped onion, minced garlic, and diced red bell pepper to the skillet. Cook until the vegetables are softened, about 5-7 minutes.

  3. 6

    Season Filling

Stir in cumin, chili powder, and black pepper. Cook for an additional 2-3 minutes until fragrant. Remove from heat and mix in chopped cilantro.

Assembly and Cooking

  1. 7

    Prepare Corn Husks

Drain the soaked corn husks and lay them flat on a clean surface.

  2. 8

    Fill Tamales

Spread about 2-3 tablespoons of tamale dough onto the center of each corn husk. Add a spoonful of the sausage filling on top of the dough.

  3. 9

    Wrap Tamales

Fold the sides of the corn husk over the filling, then fold the bottom up to secure the filling inside. Repeat with all husks.

  4. 10

    Steam Tamales

Arrange the tamales upright in a steamer basket. Cover and steam for about 1 to 1.5 hours, or until the masa pulls away from the husk easily.

  5. 11

    Serve

Let the tamales cool slightly before serving. Enjoy warm, with your favorite salsa or toppings.
