Beef Preparation

    Season the Beef

    Rub the beef chuck roast with salt and black pepper on all sides. Let it sit at room temperature for about 30 minutes to enhance the flavor.

    Sear the Beef

    In a large Dutch oven, heat olive oil over medium-high heat. Add the beef roast and sear on all sides until browned, approximately 3-4 minutes per side. Remove the beef from the pot and set aside.

    Sauté Onions and Garlic

    In the same pot, add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

Gravy Preparation

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any brown bits. Bring to a simmer.

    Add Remaining Gravy Ingredients

    Add the beef broth, tomato paste, Worcestershire sauce, dried oregano, and bay leaf to the pot. Stir well to combine.

    Return Beef to the Pot

    Place the seared beef back into the pot, ensuring it is submerged in the gravy. Bring the mixture to a boil, then reduce the heat to low.

    Slow Cook

    Cover the pot and let it simmer on low heat for 3 hours, or until the beef is tender and easily shreds with a fork.
