Preparing the Chicken

Prepare Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts on both sides with salt and black pepper.

Dredging
Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dip each chicken breast first in flour, then in the beaten eggs, and finally coat with breadcrumbs.

Frying the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Remove and place on a paper towel-lined plate to absorb excess oil.

Add Tomatoes and Seasoning
Stir in the crushed tomatoes, dried oregano, dried basil, salt, sugar, and black pepper. Bring to a simmer and let cook for about 15 minutes, stirring occasionally.
Assembling and Baking

Layer Chicken and Sauce
In a baking dish, spread a thin layer of the tomato sauce on the bottom. Place the fried chicken breasts on top, then spoon additional sauce over each piece.

Add Cheese
Sprinkle grated Parmesan cheese over the chicken, followed by shredded mozzarella cheese.

Bake
Place the baking dish in the preheated oven and bake for 20-25 minutes, until the cheese is melted and bubbly.

Remove from oven, allow to cool for a few minutes, then serve hot with pasta or a side salad.
