Preparing the Cannoli Shells

Make the Dough
In a large bowl, whisk together the flour, granulated sugar, cocoa powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg yolk, white wine (or vinegar), and water until a dough forms.

Knead and Rest
Turn the dough onto a floured surface and knead for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for at least 1 hour.

Roll and Cut
After resting, divide the dough into quarters. Roll out each quarter to about 1/8 inch thick. Cut into circles using a 4-inch round cutter.

Shape the Shells
Wrap each circle around a cannoli tube, sealing the edges with a bit of water. Repeat until all dough is used.

Fry the Shells
Heat oil in a deep fryer or heavy pot to 375°F (190°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool slightly before removing from the tubes.
