Preparation

  1. 1

    Prep the Ribs

Remove the silver skin from the back of each slab of ribs. This will help the marinade and spices penetrate the meat better.

  2. 2

    Mix Marinade

In a large bowl, combine the apple cider vinegar, olive oil, brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well until the sugar is dissolved.

  3. 3

    Marinate the Ribs

Place the ribs in a large resealable bag or a container. Pour the marinade over the ribs, ensuring they are well coated. Seal and refrigerate for at least 4 hours, preferably overnight.

Cooking

  1. 4

    Preheat the Grill

Preheat your grill to medium heat (about 300°F/150°C). If using a charcoal grill, set it up for indirect cooking.

  2. 5

    Prepare BBQ Sauce

In a saucepan, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook over medium heat, stirring occasionally, until the sauce is heated through and slightly thickened, about 10-15 minutes.

  3. 6

    Grill the Ribs

Remove the ribs from the marinade and shake off any excess. Place the ribs bone-side down on the grill. Cook for about 2 hours, brushing with BBQ sauce every 30 minutes. Cook until the ribs are tender and the meat is pulling away from the bones.

  4. 7

    Serve

Remove the ribs from the grill and let them rest for about 10 minutes. Cut into serving portions and serve with additional BBQ sauce on the side.
