Preparation

  1. 1

    Prepare the Marinade

In a large mixing bowl, combine olive oil, apple cider vinegar, brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper. Whisk together until well blended.

  2. 2

    Marinate the Meats

Place the pork ribs, chicken thighs, and brisket into a large resealable plastic bag or container. Pour the marinade over the meats, ensuring they are well coated. Seal the bag or container and refrigerate for at least 4 hours, preferably overnight.

Cooking

  1. 3

    Preheat the Grill

Preheat your grill to medium heat (about 300°F or 150°C). If using charcoal, prepare the coals until they are covered with white ash.

  2. 4

    Cook the Meats

Remove the meats from the marinade and let excess marinade drip off. Place the pork ribs, chicken thighs, and brisket on the grill. Cook for about 1.5 to 2 hours, turning occasionally and basting with barbecue sauce in the last 30 minutes of cooking.

  3. 5

    Check Doneness

Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C) for chicken and 190°F (88°C) for ribs and brisket.

  4. 6

    Rest and Serve

Once cooked, remove the meats from the grill and let them rest for 10-15 minutes before slicing. Serve with additional barbecue sauce on the side.
