    Preheat the oven to 375°F (190°C).

    In a mixing bowl, combine flour and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the dough comes together.

    Roll out the dough on a lightly floured surface to fit a 9-inch pie pan. Place the rolled dough in the pan and trim any excess. Prick the bottom with a fork.

    In a separate bowl, whisk together eggs and heavy cream. Stir in cheeses, thyme, salt, and pepper.

    Pour the egg mixture into the prepared crust and bake for 35-40 minutes or until the center is set and the top is lightly golden.

Salad Preparation

    In a small bowl, whisk together red wine vinegar, olive oil, maple syrup, salt, and black pepper to make the vinaigrette.
