Method

Preparing the Black Cod

Marinate the Cod

In a bowl, combine olive oil, salt, black pepper, lemon juice, and dill. Add the black cod fillets and marinate for at least 30 minutes.

Slow Cook the Cod

Place the marinated black cod in a slow cooker and cook on low for 2-3 hours, or until the fish is tender.

Roasting the Fennel

Prepare Fennel

Preheat the oven to 400°F (200°C). Cut fennel bulbs into wedges and toss with olive oil, salt, and black pepper.

Roast Fennel

Spread fennel on a baking sheet and roast for 25-30 minutes until caramelized and tender.

Prepare Cauliflower

In a skillet, heat olive oil over medium heat. Add cauliflower florets, salt, black pepper, and garlic powder.

Caramelize Cauliflower

Cook for 15-20 minutes, stirring occasionally, until the cauliflower is golden brown and tender.

Making the Smoked Tomato Chutney

Cook the Chutney

In a saucepan over medium heat, combine smoked tomatoes, diced red onion, brown sugar, apple cider vinegar, and salt. Simmer for 20 minutes until thickened.

Preparing the Saffron Bisque

Cook the Bisque

In a large pot, bring vegetable stock to a simmer. Add saffron strands and cook for 10 minutes. Stir in coconut cream, salt, and black pepper, and simmer for an additional 5 minutes.
