Method

Duck Preparation

    Sear Duck Breasts

    Score the skin of the duck breasts and season with salt and black pepper. Heat a skillet over medium-high heat and place the duck breasts skin-side down. Sear for 6-8 minutes until the skin is crispy. Flip and cook for another 4-5 minutes for medium-rare. Let rest before slicing.

Pistachio Dukkah Preparation

    Make Dukkah

    Toast the pistachios, sesame seeds, coriander seeds, and cumin seeds in a dry skillet over medium heat until fragrant. Allow to cool slightly, then pulse in a food processor with salt until coarsely ground.

Hakurei Turnips Preparation

    Roast Turnips

    Preheat the oven to 400°F (200°C). Toss the hakurei turnips with olive oil, salt, and black pepper. Spread on a baking sheet and roast for about 20 minutes until tender and lightly caramelized.

Sour Cherry Jus Preparation

    Prepare Jus

    In a saucepan, combine sour cherries, chicken stock, honey, balsamic vinegar, and salt. Bring to a simmer and cook for 10-15 minutes until slightly reduced. Strain and set aside.

Plating

    Serve

    Slice the duck breasts and arrange on a plate. Add roasted hakurei turnips and drizzle with sour cherry jus. Sprinkle with pistachio dukkah before serving.
