    Prepare the Fries

    Preheat the oven to 425°F (220°C). Cut potatoes into thin strips, toss with olive oil, rosemary, salt, and pepper. Bake for 25-30 minutes until golden brown and crispy.

    Cook the Burger Patties

    Form the ground beef into 4 equal patties. Season with salt and pepper. Heat a skillet or grill over medium-high heat, and cook the patties for about 4-5 minutes on each side or until desired doneness.

    Melt the Cheese

    In the last minute of cooking, place a slice of aged cheddar on each patty and cover to melt the cheese.

    Assemble the Burger

    Toast the burger buns lightly. Spread garlic aioli on the bottom half, add the lettuce, the cheeseburger patty, a generous spoon of beet chutney, and a slice of dill pickle. Top with the other half of the bun.

    Serve

    Serve the burgers hot with a side of rosemary fries.
