Salad Ingredients

Method

Preparation

  1. 1

    Grill the Beef

Preheat the grill to medium-high heat. Season the beef striploin with salt and black pepper. Grill the beef for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let it rest for 5 minutes before slicing.

  2. 2

    Prepare the Asparagus

While the beef is resting, toss the asparagus with olive oil, salt, and pepper. Grill the asparagus for about 2-3 minutes, turning occasionally, until tender and slightly charred.

  3. 3

    Make the Brown Butter Emulsion

In a small pan, melt 4 tablespoons of dairy-free butter over medium heat. Allow it to cook until it turns golden brown and has a nutty aroma. Remove from heat and whisk in a tablespoon of olive oil and a pinch of salt.

  4. 4

    Assemble the Salad

In a large bowl, combine grilled asparagus, sliced beef, chopped parsley, and basil. Drizzle with the brown butter emulsion and toss gently to combine.

  5. 5

    Serve

Divide the salad among plates and serve immediately, garnished with additional herbs if desired.
