Hummus Preparation

Prepare the Soybeans
Soak the soybeans in water overnight. Drain and rinse before cooking.

Cook the Soybeans
In a pot, cover the soaked soybeans with fresh water and boil for about 1 hour or until tender. Drain.

Blend the Hummus
In a food processor, combine cooked soybeans, roasted garlic, goat yogurt, lemon juice, cumin, olive oil, salt, and schug. Blend until smooth.

Garnish
Transfer the hummus to a serving bowl and sprinkle chopped parsley on top.
Focaccia Preparation

Activate the Yeast
In a bowl, combine warm water and active dry yeast. Let it sit for about 5 minutes until frothy.

Make the Dough
In a large mixing bowl, combine flour and salt. Gradually add the yeast mixture and 2 tablespoons of olive oil. Mix until a dough forms.

Knead the Dough
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Let it Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Shape and Bake
Preheat the oven to 425°F (220°C). Punch down the risen dough and spread it into a greased baking pan. Dimple the surface with your fingers, drizzle with remaining olive oil, and sprinkle rosemary if using. Bake for 20-25 minutes until golden brown.
