Hummus Preparation

Prepare the Soybean Hummus
In a blender or food processor, combine cooked soybeans, roasted garlic, cumin, goat yogurt, olive oil, lemon juice, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning if necessary.
Herb Puree Preparation

Make the Herb Puree
In a food processor, combine fresh parsley, cilantro, garlic cloves, lemon juice, olive oil, and salt. Blend until you achieve a smooth paste. Set aside.
Sourdough Focaccia Preparation

Prepare the Focaccia Dough
In a mixing bowl, combine gluten-free flour, active dry yeast, warm water, olive oil, and salt. Mix until a dough forms. Knead gently for a few minutes, then let it rise in a warm place for about 1 hour.

Bake the Focaccia
Preheat the oven to 425°F (220°C). Spread the risen dough onto a greased baking sheet, pressing it out to fit. Bake for 20-25 minutes or until golden brown. Remove from the oven and let cool slightly.
