Prepare the Chicken
Preheat the oven to 400°F (200°C). In a bowl, rub the organic chicken breasts with olive oil, salt, black pepper, garlic powder, and paprika. Make sure they are well coated.

Roast the Chicken
Place the chicken breasts on a baking sheet and roast them in the preheated oven for 25-30 minutes or until they reach an internal temperature of 165°F (74°C).

Roast the Mushrooms
While the chicken is roasting, clean and slice the mushrooms. Toss them in a little olive oil, salt, and pepper, and spread them on another baking sheet. Roast in the oven for about 15-20 minutes until golden brown.

Make the Lemon-Chicken Jus
In a saucepan, combine the chicken broth and bring it to a simmer. Add lemon juice, lemon zest, and honey (if using). Let it reduce for about 10 minutes until slightly thickened.

Serve the Dish
Once the chicken and mushrooms are done, plate the chicken breasts, top with roasted mushrooms and pickled peppers, and drizzle the lemon-chicken jus over the top. Garnish with fresh parsley.
