Prepare Quinoa

Cook the Quinoa
Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until water is absorbed. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

In a large bowl, combine the cooked quinoa, diced cucumber, halved cherry tomatoes, diced red bell pepper, finely chopped red onion, chopped parsley, and chopped cilantro. Mix well.

Incorporate Hummus and Dressing
Add the soybean hummus and green goddess dressing to the salad mixture. Gently fold to ensure everything is evenly coated.
Serve

Top with Feta
Transfer the salad to a serving dish and sprinkle the crumbled barrel aged feta on top. Serve immediately or chill in the refrigerator for 30 minutes before serving.
