    Cook the Cavatelli

    In a large pot of salted boiling water, cook the cavatelli pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Bolognese Sauce

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.

    Add Mushrooms and Tomatoes

    Add the chopped oyster mushrooms to the skillet and cook until they are soft, about 5 minutes. Then stir in the crushed tomatoes and marjoram. Season with salt and black pepper to taste.

    Incorporate Spinach

    Add the fresh baby spinach to the sauce and cook until wilted, about 2-3 minutes.

    Combine and Serve

    Toss the cooked cavatelli pasta with the bolognese sauce until well combined. Serve hot, topped with grated Parmesan cheese if desired.
