Method

Ribeye Steak

    Prepare the Steak

    Season the ribeye steak generously with salt and black pepper on both sides.

    Sear the Steak

    In a large skillet, heat olive oil over high heat. Once hot, add the steak and sear for 3-4 minutes on each side until a crust forms.

    Finish with Butter

    Reduce heat to medium, add butter and thyme, baste the steak with the melted butter for another 2 minutes. Remove from heat and let rest.

Short Rib Croquettes

    Cook the Short Ribs

    Slow-cook short ribs in a pressure cooker or oven until tender, about 2-3 hours. Shred the meat and let it cool.

    Prepare Croquette Mixture

    In a bowl, combine shredded short ribs, salt, and black pepper. Form into small balls.

    Coat and Fry

    Dredge each ball in flour, dip in beaten eggs, then roll in breadcrumbs. Heat oil in a pan and fry until golden brown. Drain on paper towels.

Smoked Beef Consommé

    Prepare the Broth

    In a large pot, add beef bones, onion, carrots, celery, garlic, bay leaves, and thyme. Cover with water.

    Simmer the Broth

    Bring to a boil, then reduce to a simmer for 4-6 hours. Skim off any foam that rises to the top.

    Strain and Season

    Strain the broth through a fine mesh sieve. Season with smoked salt. Serve hot.
