Profiteroles

    Prepare the Dough

    In a saucepan, bring water and butter to a boil. Add flour and salt, stirring until the dough forms a ball. Remove from heat and let cool slightly. Beat in eggs one at a time until smooth.

    Bake the Profiteroles

    Preheat the oven to 400°F (200°C). Pipe or spoon the dough onto a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden and puffed. Let cool.

Peanut Butter Mousse

    Prepare Gelatin

    Sprinkle gelatin over 2 tbsp of water and let sit for 5 minutes. Then, heat gently until dissolved.

    Make the Mousse

    Whip heavy cream to soft peaks. In a bowl, mix peanut butter, powdered sugar, vanilla, and dissolved gelatin until smooth. Fold in whipped cream gently until combined.

Quince Purée

    Cook the Quince

    In a saucepan, combine chopped quince, sugar, and water. Simmer until quince is tender. Blend until smooth and set aside.

Vanilla Chantilly

    Whip Cream

    In a bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.

Assembly

    Assemble the Dish

    Cut the tops off the cooled profiteroles. Fill with peanut butter mousse, replace tops, and drizzle with quince purée. Top with vanilla chantilly and sprinkle roasted peanuts.
