Method
Mousse Preparation

Melt Chocolate
In a heatproof bowl, melt the dark chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let it cool slightly.

Whip Cream
In a large mixing bowl, whip the heavy cream and sugar until soft peaks form. Set aside.

Raspberry Sauce Preparation

Cacao Nib Tuile Preparation

Make Tuile Batter
In a bowl, mix melted butter, sugar, flour, cacao nibs, and water until smooth. Spread thinly on a parchment-lined baking sheet.

Bake Tuiles
Bake in a preheated oven at 180°C (350°F) for about 8-10 minutes, or until golden brown. Let cool and then break into shards.
Assembly

Serve Mousse
Spoon the chocolate mousse into serving dishes, drizzle with raspberry sauce, and top with cacao nib tuile shards.
