Cider Preparation

    Prepare the Apples

    Wash and chop the fresh apples into small pieces, removing seeds and stems. You should have about 6 cups of chopped apples.

    Extract Juice

    Using a juicer or a blender, extract the juice from the chopped apples. If using a blender, you may need to add a bit of water to help blend the apples smoothly.

    Combine Ingredients

    In a large pot, combine the apple juice, granulated sugar, water, lemon juice, and cinnamon stick. Stir well to dissolve the sugar.

    Add Yeast

    Once the mixture is cool, sprinkle the yeast over the surface and let it sit for about 10 minutes to activate.

    Fermentation

    Cover the pot with a clean cloth and let it sit in a dark, warm place for about 1-2 weeks, stirring daily. You should notice bubbling as fermentation occurs.

    Strain and Bottle

    After fermentation, strain the cider through a fine mesh sieve or cheesecloth to remove solids. Transfer the liquid into clean bottles and seal. You can carbonate it if desired.

    Chill and Serve
