    Prepare the Dough

    In a saucepan, combine water and butter. Bring to a boil over medium heat. Once boiling, add flour and salt, stirring until the mixture forms a ball. Remove from heat and let cool slightly.

    Incorporate Eggs

    Add eggs one at a time, stirring well after each addition until fully incorporated. The dough should be smooth and glossy.

    Add Cheese

    Fold in the smoked five brothers cheese until evenly distributed.

    Pipe the Dough

    Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Using a piping bag, pipe small mounds of dough (about 1 inch in diameter) onto the prepared baking sheet.

    Bake

    Bake in the preheated oven for 20-25 minutes or until golden brown and puffed. Remove from oven and let cool slightly.

    Cook the Plums

    In a saucepan, combine plums, sugar, water, and lemon juice. Bring to a boil over medium heat.

    Simmer

    Reduce the heat and let simmer for about 15-20 minutes, or until the plums are soft and the mixture thickens slightly.

    Cool and Serve

    Allow the compôte to cool before serving with the gougères.
