Preparation Steps
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the organic chicken breasts with salt and black pepper. Place them in a baking dish and drizzle with olive oil. Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and juices run clear.
- 2
Sauté the Chanterelles
While the chicken is baking, clean and slice the chanterelle mushrooms. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chanterelles and sauté for about 5-7 minutes until they are tender and golden brown. Season with salt and pepper.
- 3
Cook the Sweet Corn
Remove the kernels from the Welsh Brothers sweet corn ears. In another pan, melt 1 tablespoon of butter over medium heat, then add the corn and sauté for about 5-7 minutes until tender. Season with salt and pepper.
- 4
Prepare the Truffle Vinaigrette
In a small bowl, whisk together the truffle oil, balsamic vinegar, and a pinch of salt and pepper. Adjust to taste.
- 5
Assemble the Dish
On a serving platter, lay down a bed of garden greens. Slice the baked chicken and place it on top. Add the sautéed chanterelles and sweet corn. Drizzle with the truffle vinaigrette before serving.
