    Prepare the Potatoes

    Peel and chop the potatoes into small cubes.

    Cook the Base

    In a large pot, melt the butter over medium heat. Add the chopped potatoes and sauté for 5 minutes.

    Add Broth

    Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes or until the potatoes are tender.

    Blend the Soup

    Using an immersion blender or a regular blender, blend the soup until smooth. Return to heat.

    Add Cream and Cheese

    Stir in the heavy cream and aged cheddar cheese. Season with salt and black pepper. Heat until the cheese is melted.

    Prepare Scallion Oil

    Finely chop the scallions and sauté them in olive oil over medium heat until fragrant. Set aside.

    Ladle the soup into bowls, drizzle with scallion oil, and sprinkle with extra cheddar cheese if desired.
