Chocolate Mousse

Salted Caramel

Method

Prepare the Chocolate Mousse

    Melt the Chocolate

    In a heatproof bowl, melt the dark and white chocolate together over a double boiler until smooth. Allow to cool slightly.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Set aside.

    Beat the Eggs

    In another bowl, beat the eggs and sugar together until pale and fluffy.

    Combine Mixtures

    Gently fold the melted chocolate into the egg mixture, then fold in the whipped cream until fully combined.

    Chill the Mousse

    Divide the mousse between serving glasses or a large dish and refrigerate for at least 4 hours or until set.

Prepare the Salted Caramel

    Make the Caramel

    In a saucepan, combine the granulated sugar and water over medium heat. Stir until the sugar dissolves.

    Cook the Caramel

    Increase the heat to high and cook without stirring until the mixture turns a deep amber color.

    Add Cream and Salt

    Remove from heat and carefully stir in the heavy cream and salt. Allow to cool slightly before using.

Assemble the Dessert

    Top the set mousse with salted caramel and sprinkle with cocoa nibs before serving.
