Chilled Garden Zucchini Soup Recipe

Soup Preparation

    Prepare the Zucchini

    Wash and chop the zucchini into small pieces. Set aside.

    Sauté the Garlic

    In a large pot, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Cook the Zucchini

    Add the chopped zucchini to the pot with sautéed garlic. Cook for about 5 minutes until the zucchini is tender.

    Blend the Soup

    Add vegetable broth, green chilies, salt, and black pepper to the pot. Bring to a simmer for 10 minutes. Remove from heat and let cool slightly. Blend until smooth.

    Chill the Soup

    Stir in lemon juice and chopped cilantro. Transfer the soup to the refrigerator and chill for at least 2 hours.

    Prepare Charred Corn Salsa

    Grill or char corn until cooked and slightly blackened. Cut off the kernels and mix with diced tomatoes, red onion, lime juice, and salt.

    Serve the chilled zucchini soup in bowls topped with charred corn salsa and additional cilantro if desired.
