Preparation

Cure the Cucumbers
Slice cucumbers and mix with vinegar, sugar, and salt. Let sit for at least 30 minutes.

Confite the Potatoes
Preheat oven to 300°F (150°C). Place baby potatoes in a baking dish, cover with olive oil, salt, and thyme. Bake for 1.5 hours until tender.

Prepare the Mussels
In a large pot, sauté garlic and shallots in olive oil until fragrant. Add mussels, white wine, and salt. Cover and steam until mussels open, about 5-7 minutes. Reserve cooking liquid.

Make Dill Mussel Emulsion
In a blender, combine dill, reserved mussel cooking liquid, and butter. Blend until smooth and emulsified.
Serving

Plate the Dish
On a plate, arrange confit potatoes, top with grilled Arctic Char, add steamed mussels, and drizzle with dill mussel emulsion. Garnish with additional dill and serve.
