Preparation of Compote

Make the Plum Compote
In a saucepan over medium heat, combine the chopped Ontario plums, granulated sugar, lemon juice, and dried lavender. Stir gently and cook for about 10-15 minutes until the plums are soft and the mixture has thickened. Remove from heat and let cool.
Brie Preparation

Prepare the Brie
Preheat your broiler. Cut the Brie in half horizontally to create a top and bottom layer. Place the bottom half on a heatproof serving dish and spread half of the cooled plum compote on top. Place the top half of the Brie back on.

Brûlée the Brie
Sprinkle the top of the Brie with a thin, even layer of granulated sugar. Place it under the broiler for 2-3 minutes or until the sugar caramelizes and forms a crispy crust. Watch closely to prevent burning.

Serve
Once the Brie is done, remove it from the broiler. Serve immediately with the toasted brioche crostini and the remaining plum compote on the side.
