Cooking the Pasta

    Cook the Cavatelli

    Bring a large pot of salted water to a boil. Add cavatelli pasta and cook according to package instructions until al dente. Drain and set aside.

Preparing the Filling

    Sauté the Pork and Vegetables

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add ground Berkshire pork and cook until browned, breaking it up with a spoon. Stir in chopped maitake mushrooms, fennel, marjoram, salt, and pepper. Cook until mushrooms are tender and the pork is fully cooked, about 5-7 minutes. Remove from heat.

Combining and Serving

    Mix and Serve

    In a large bowl, combine cooked cavatelli with the pork and mushroom mixture. Toss until well combined. Serve hot, garnished with grated Parmigiano-Reggiano and chopped parsley.
