Prepare the Cavatelli

Cook the Pasta
In a large pot of salted boiling water, cook the cavatelli pasta according to package instructions until al dente. Drain and set aside.
Make the Sauce

Sauté the Ingredients
In a large skillet over medium heat, add olive oil. Once hot, add the diced Berkshire pork and cook until browned, about 5-7 minutes. Add the fennel and garlic, cooking for another 2-3 minutes until fragrant.

Add the Mushrooms
Stir in the chopped maitake mushrooms and cook until they are tender and golden brown, about 5 minutes.

Season the Sauce
Add marjoram, salt, and pepper to taste. Mix well to combine all flavors.

Combine with Pasta
Add the cooked cavatelli to the skillet and toss to coat the pasta in the sauce. If needed, you can add a splash of pasta cooking water to help combine.

Finish with Cheese
Remove from heat and stir in the grated Parmigiano-Reggiano cheese until melted and well incorporated.
