Core and slice the apples. Add them to the skillet with the Brussels sprouts and cook for an additional 5 minutes until the apples are tender and caramelized.

Prepare Potato Rösti
Grate the potatoes and squeeze out excess moisture. Mix with chopped onion, season with salt and pepper. In a non-stick skillet, heat olive oil and form the potato mixture into patties. Cook until golden brown and crispy on both sides, about 4-5 minutes per side.
Apple Cider Mignonette
