    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Make the Dough

    In a large bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Gradually mix in the flour, grated cheddar cheese, salt, and black pepper until a dough forms.

    Shape and Bake

    Roll the dough into a log and wrap it in plastic wrap. Refrigerate for at least 30 minutes. Once chilled, slice the dough into 1/4-inch thick rounds and place them on a baking sheet lined with parchment paper. Bake for 15-18 minutes or until the edges are lightly golden.

    Cool

    Remove from the oven and let the shortbread cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Apple Purée

    Cook the Apples

    In a medium saucepan, combine the chopped honey crisp apples and water. Bring to a boil, then reduce heat and simmer for about 15 minutes or until the apples are soft.

    Blend the Purée

    Remove from heat and add lemon juice and cinnamon. Use an immersion blender or a standard blender to purée the mixture until smooth. If desired, add honey to taste.

    Serve the shortbread with a generous dollop of honey crisp apple purée on the side.
