Prepare the Dough

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center, and add the eggs and water. Gradually mix the flour into the wet ingredients until a dough begins to form.

    Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Wrap the dough in plastic wrap and let it rest for 30 minutes.

    Mix the Filling

    In a bowl, combine the ricotta cheese, grated Parmesan cheese, chopped spinach, minced garlic, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

Assemble the Rav

    After the dough has rested, divide it into four pieces. Roll each piece out thinly using a pasta machine or rolling pin.
