Marinated Portobello Mushrooms

Method

Marinating the Mushrooms

    Prepare the Marinade

    In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, fresh thyme, salt, and black pepper.

    Marinate the Mushrooms

    Place the Portobello mushrooms in a shallow dish and pour the marinade over them. Let it marinate for at least 30 minutes, flipping halfway through.

Grilling the Mushrooms

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Mushrooms

    Remove the mushrooms from the marinade and grill for about 5-7 minutes on each side, or until they are tender and have nice grill marks.

Assembling the Sandwich

    Prepare the Ciabatta Buns

    While the mushrooms are grilling, slice the ciabatta buns in half and lightly toast them on the grill.

    Layer the Ingredients

    On the bottom half of each ciabatta bun, layer the grilled Portobello mushrooms, roasted red peppers, crumbled goat cheese, shredded mozzarella cheese, fresh spinach, and sliced tomatoes.

    Top and Serve

    Place the top half of the ciabatta bun on each sandwich. Serve immediately with a house salad, Caesar salad, or soup.
