Prepare Meatballs

Mix Ingredients
In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, garlic powder, salt, black pepper, and chopped parsley. Mix well until all ingredients are evenly incorporated.

Form Meatballs
Shape the mixture into meatballs, about 1-1.5 inches in diameter. Place them on a baking sheet lined with parchment paper.

Cook Meatballs
Preheat the oven to 400°F (200°C). Bake the meatballs in the preheated oven for 20-25 minutes or until browned and cooked through.
Saute Peppers and Onions

Prepare Vegetables
While the meatballs are baking, slice the bell peppers and onion into strips.

Saute Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced peppers and onions. Season with salt and pepper. Saute for about 5-7 minutes until the vegetables are tender and slightly caramelized.
Assemble Sandwich

Toast Rolls
Slice the submarine rolls in half and toast them lightly in the oven or on a grill.

Layer Ingredients
Spread a generous amount of Ricco's marinara sauce on the bottom half of each toasted roll. Place 2-3 meatballs on top of the sauce, followed by the sautéed peppers and onions. Sprinkle with the Italian cheese blend.

Melt Cheese
Return the assembled sandwiches to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

If desired, garnish with fresh basil before serving. Close the sandwiches and enjoy your delicious meatball sandwiches!
