Pasta Preparation

Cook the Penne Pasta
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
Making the Mac-N-Cheese

Combine Pasta and Sauce
In a large mixing bowl, combine the cooked penne pasta, Alfredo sauce, shredded smoked gouda cheese, and crumbled bacon. Mix well until the pasta is evenly coated.
Preparing the Topping

Prepare the Panko Crust
In a small bowl, mix together the panko breadcrumbs, melted butter, and grated Parmesan cheese until the breadcrumbs are evenly coated.
Baking

Bake the Mac-N-Cheese
Preheat your wood-fired oven to a medium-high heat (around 400°F / 200°C). Transfer the mac-n-cheese mixture into a baking dish and top with the panko breadcrumb mixture. Bake in the oven for about 15-20 minutes, or until the top is golden brown and crispy.

Serve Hot
Remove from the oven and let it cool for a few minutes. Serve hot, accompanied by your choice of house salad, Caesar salad, or soup.
