Marinade

Vegetables (for grilling)

Method

Preparation

  1. 1

    Make the Marinade

In a large bowl, combine olive oil, fresh lemon juice, minced garlic, chopped rosemary, salt, and black pepper. Whisk until well blended.

  2. 2

    Marinate the Chicken

Place the whole chicken in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is fully coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat, about 375-450°F (190-232°C).

  2. 4

    Prepare the Vegetables

While the grill is heating, toss the sliced bell peppers, zucchini, and red onion with a drizzle of olive oil and a pinch of salt and pepper.

  3. 5

    Grill the Chicken

Remove the chicken from the marinade, allowing excess marinade to drip off. Place the chicken breast side down on the grill. Grill for about 30 minutes, then flip the chicken and grill for another 30-40 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.

  4. 6

    Grill the Vegetables

During the last 15 minutes of grilling the chicken, add the prepared vegetables to the grill. Cook until they are tender and slightly charred, about 5-7 minutes per side.

  5. 7

    Rest and Serve

Once the chicken is fully cooked, remove it from the grill and let it rest for 10-15 minutes before carving. Serve with the grilled vegetables.
