    Prepare the Coconuts

    Use a hammer or a coconut tool to crack open the mature coconuts. Drain the coconut water into a bowl and set aside for later use. Carefully remove the coconut meat from the shell using a knife or a coconut scraper. Rinse the coconut meat under running water to remove any residue.

    Grate the Coconut

    Using a grater or a food processor, grate the coconut meat into fine shreds. Measure out 1 cup of grated coconut for the mixture and reserve the rest for garnish.

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and sugar. Whisk the dry ingredients together until well combined.

    Prepare the Wet Mixture

    In another bowl, whisk together the coconut milk, eggs, and vanilla extract until fully combined. Gradually add this wet mixture to the dry ingredients, stirring until just combined. Fold in the grated coconut meat.

    Heat the Oil

    In a deep frying pan or large pot, heat the vegetable oil over medium heat until it reaches about 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and rises to the surface, the oil is ready.

    Using a spoon or a small ice cream scoop, drop spoonfuls of the coconut batter into the hot oil. Fry in batches, being careful not to overcrowd the pan. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

    Once the fritters are golden brown, remove them from the oil and place them on a plate lined with paper towels to drain excess oil. Serve hot, garnished with the reserved grated coconut or a sprinkle of powdered sugar if desired.
