Chicken Preparation

Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and black pepper on both sides.

Bread the Chicken
Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, dip in the egg, and then coat with breadcrumbs. Ensure they are fully covered.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side until golden brown. Transfer to a baking dish.

Add Sauce and Cheese
Pour Ricco's marinara sauce over the cooked chicken breasts, then sprinkle mozzarella and parmesan cheese on top. Bake in the preheated oven for about 15 minutes, or until the cheese is bubbly and golden.

Assemble the Sandwich
While the chicken is baking, slice the ciabatta buns in half. Once the chicken is done, place a piece of chicken on the bottom half of each bun. Add fresh basil leaves before placing the top half of the bun.
