Making the Cannoli Shells

Prepare the Dough
In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt. Mix well. Add in the unsalted butter and rub it into the dry ingredients until the mixture resembles coarse crumbs.

Add Wet Ingredients
Make a well in the center of the flour mixture and add the egg yolk, white wine (or vinegar), and water. Mix until the dough begins to come together. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Roll and Cut the Dough
After chilling, roll out the dough to 1/8-inch thickness on a floured surface. Cut into 4-inch circles using a round cutter.

Fry the Shells
Heat the oil in a deep fryer or a heavy pot to 350°F (175°C). Wrap each dough circle around a cannoli tube, sealing the edges with a little water. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool before removing the tubes.

Mix the Filling
In a medium bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and cinnamon (if using). Mix until smooth and creamy.

Add Chocolate Chips
Fold in the chocolate chips gently to the ricotta mixture until evenly distributed.
Assembling the Cannoli

Fill the Shells
Using a piping bag or a spoon, fill each cooled cannoli shell with the ricotta filling. Be generous but avoid overfilling.

Serve
Dust the filled cannoli with additional powdered sugar before serving for a decorative touch.
