Method
Preparing the Calamari

Clean the Calamari
If not already cleaned, rinse the fresh calamari under cold water and remove any insides. Cut the calamari into rings.

Prepare the Breading
In a bowl, mix the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. This will be the breading for the calamari.

Heat the Oil
In a deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Bread the Calamari
Dredge the calamari rings in the flour mixture, making sure they are evenly coated.

Fry the Calamari
Carefully place the breaded calamari rings into the hot oil, frying in batches if necessary. Fry for 2-3 minutes or until golden brown. Remove and drain on paper towels.

Add Tomatoes and Spices
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 20 minutes, stirring occasionally.

Finish with Fresh Basil
Stir in the chopped fresh basil and red chili flakes (if using) just before serving.
