Filet Preparation

Prepare the Filet
Preheat your oven to 400°F (200°C). Season the center cut filet with salt and black pepper on both sides.

Sear the Filet
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the filet for 3-4 minutes on each side until browned.

Add Bleu Cheese
Top the filet with crumbled bleu cheese mixed with heavy cream. Transfer the skillet to the preheated oven and bake for 6-8 minutes for medium-rare, or until desired doneness.
Fried Onion Straws

Soak Onions
Place thinly sliced onions in a bowl and cover with buttermilk. Let soak for at least 30 minutes.

Prepare Coating
In a separate bowl, mix together flour, cornstarch, garlic powder, and salt.

Coat and Fry Onions
Remove onions from buttermilk, allowing excess to drip off. Dredge the onions in the flour mixture until well coated. In a deep skillet, heat vegetable oil over medium heat. Fry the onion straws in batches until golden and crispy, about 2-3 minutes. Drain on paper towels.

Prepare Loaded Toppings
Once baked, cut a slit on top of each potato and fluff with a fork. Add butter, sour cream, shredded cheddar cheese, chopped green onions, and bacon bits.

Cook the Vegetable
Steam or sauté the seasonal vegetable of your choice until just tender, about 5-7 minutes. Season with salt and pepper to taste.
