Preparing the Balsamic Glaze

Simmer
Bring to a simmer and reduce heat to low. Let simmer for about 15-20 minutes until thickened. Stir occasionally.

Cool
Remove from heat and let cool slightly; it will thicken more as it cools.
Cooking the Salmon

Preheat Grill
Preheat your grill to medium-high heat.

Season Salmon
Brush the salmon fillet with olive oil, then season with salt and black pepper.

Grill Salmon
Place the salmon on the grill skin-side down. Cook for about 4-6 minutes per side or until cooked through, brushing with balsamic glaze during the last minute of cooking.
Making the Mushroom Risotto

Cook Mushrooms
Add sliced mushrooms and cook until softened.

Add Rice
Stir in arborio rice and cook for 1-2 minutes until lightly toasted.

Add Broth Gradually
Begin adding warm broth, one ladle at a time, stirring frequently. Allow the rice to absorb the liquid before adding more.

Finish Risotto
Continue until the rice is creamy and al dente, about 18-20 minutes. Stir in parmesan cheese, salt, and black pepper.

Combine Salad Ingredients
In a large bowl, combine mixed greens, cherry tomatoes, and cucumber.

Drizzle with olive oil and balsamic vinegar, then season with salt and black pepper. Toss to combine.
