If using fresh coconut, crack it open and scoop out the meat. Grate the coconut meat finely and set aside.

In a mixing bowl, whisk together the eggs, sugar, and salt until well combined. Gradually add in the all-purpose flour, mixing until a smooth batter forms.

Gently fold the grated coconut meat into the batter until evenly incorporated.
