Horchata Ice Cream

Prepare the Horchata
In a blender, combine rice, water, and the cinnamon stick. Blend until the rice is coarsely ground. Let it sit for 4 hours or overnight to soak.

Strain the Mixture
After soaking, strain the mixture through a fine mesh sieve or cheesecloth into a bowl, discarding the solids.

Mix the Ice Cream Base
To the strained liquid, add milk, sugar, vanilla extract, heavy cream, and a pinch of salt. Whisk until sugar is dissolved.

Churn the Ice Cream
Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Freeze until firm.
Mexican Rum Soaked Chocolate Cake

Preheat Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.

In a separate bowl, whisk together eggs, vegetable oil, buttermilk, and vanilla extract.

Pour the wet mixture into the dry ingredients and mix until just combined. Do not overmix.

In a large bowl, beat the egg whites with an electric mixer on medium speed until foamy.

Add cream of tartar and continue beating until soft peaks form.

Gradually add granulated sugar, one tablespoon at a time, beating on high until stiff peaks form and the mixture is glossy.
