    Prepare the Ingredients

    Wash and trim the ramps, and slice them into 1-inch pieces. Rinse and slice the chile guero into thin rings. Cut the New York strip steaks into manageable portions if they are overly large.

    Season the Steak

    Generously season the New York strip steaks with salt and black pepper on both sides, allowing them to sit at room temperature for about 15-20 minutes.

Cooking

    Cook the Steak

    Heat a grill or a cast iron skillet over medium-high heat. Add 1 tablespoon of olive oil. Once hot, place the seasoned steaks in the pan and cook for 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Sauté the Ramps and Chile Guero

    In a separate pan, heat the remaining olive oil over medium heat. Add the ramps and chile guero, sautéing for 3-4 minutes until they are tender and fragrant.

    Add Cheeses

    Once the steaks are cooked to your liking, remove them from the heat and let them rest for a few minutes. Top the steaks with slices of chivo blanco and truffled cheese while they are still warm.

Serving

    Plate the Dish

    Place the cooked steak on a plate, spoon the sautéed ramps and chile guero over the top, and garnish with chopped fresh parsley.
