    Prepare the Marinade

    In a bowl, combine pineapple juice, white vinegar, achiote paste, minced garlic, cumin, oregano, salt, and black pepper. Mix well until the achiote paste is fully dissolved.

    Marinate the Pork

    Cut the pork shoulder into small chunks and add it to the marinade. Cover and refrigerate for at least 2 hours, preferably overnight for the best flavor.

Cooking the Pork

    Cook the Pork

    Preheat your grill or skillet over medium-high heat. Remove the pork from the marinade and cook for about 10-15 minutes, turning occasionally, until the pork is well-browned and cooked through.

    Rest the Pork

    Once cooked, remove the pork from the heat and let it rest for about 5 minutes before slicing it thinly.

Assembling Tacos

    Warm the Tortillas

    Warm the corn tortillas on the grill or in a skillet for about 30 seconds on each side until they are pliable.

    Assemble the Tacos

    Place a portion of the sliced pork on each tortilla. Top with diced pineapple, diced onion, and chopped cilantro.

    Serve the tacos with lime wedges on the side for squeezing over the top before eating.
